Coconut Curried Beef on Rice Noodles

I decided to post one of our favorite recipes on here.  I hope you try it because we love it!

Coconut Curried Beef on Rice Noodles  ~ In the Slow Cooker!

1 cup light coconut milk (in the can)
1-2 Tbsp red curry paste
2 cloves garlic, finely chopped
2 tsp grated ginger
Sea salt
1 pound stew meat cut into 1 in pieces
4 oz. snap peas, sliced crosswise
1/2 red onion sliced thinly
Red cabbage sliced thinly
2 Tbsp fresh lime juice
1/2 cup fresh cilantro chopped
Chopped peanuts (optional)
Rice noodles 14 oz. (I use Thai kitchen brand)

In a 5 to 6 qt slow cooker, whisk together coconut milk, curry paste, garlic, ginger and 1/4 tsp salt.
Add beef and toss to coat.  Cook, covered, until the meat easily pulls apart.  6-7 hours on low or 4-5 hours on high.
Fifteen minutes before serving, cook the noodles according to package directions.  Stir in peas, onions, cilantro and lime juice in the beef at this time. 
Serve beef over the noodles and red cabbage. 

Ive made this twice now and we never have any left overs.  Enjoy!
